Hm..the carrots look fine to me. If you’re looking to replace them all together I’d say go with some broccoli trees or a bit of fruit for balance.

Sprouts are great fillers as well. I really like radish sprouts as they have larger leaves and lots of flavor.

Clamoring: Oops, missed this comment: Here’s my belated response (>_<) Can you eat radish sprouts raw? I rarely eat it, mostly because I don’t see it in the shops and don’t know how it’s supposed to be prepared! :S

bunbunlife: It’s hard for me as well, it’s only because I had extra time to plan it all out a little better than usual that it worked out this way.
